Quick Shredded Chicken Recipes
SHREDDED SESAME CHICKEN
1 chicken (2 3/4 lb.) lightly boiled, skinned, boned & shredded
DRESSING:
1 tsp. sugar 2 tbsp. light soy sauce 2 1/2 - 4 tbsp. sesame paste 1 tbsp. sesame oil 1 tbsp. cider or Chinese red vinegar 1 tbsp. chopped green onion 1/2 tsp. grated fresh ginger 2 cloves garlic, crushed 1/4 tsp. Chinese hot pepper oil (more to taste)
Place shredded chicken in a bowl. Mix the remaining ingredients together to form a salad dressing. Toss with the chicken and arrange on a platter. Garnish with more chopped green onion, if desired. Serves 4. Optional: Add chopped chilies to dressing, 1 tablespoons sesame seeds, black pepper.
